As the calendar year flips to 2026, the way we eat continues to evolve, shaped by health and wellness, fun global fusion, and tighter budgets. This year’s trends aren’t about one-off fads or shock value. They’re about smarter indulgence, bolder flavors, and creating a space where intention meets appetite.
Swicy, Texture, and Tallow
This coming year, expect to see lots of “swicy” combos — sweet and spicy. Think hot honey pizza and spicy dark chocolate. These are bold combinations like sweet fruit paired with chilies, savory notes in sweet dishes, and citrus with peppers. Lucky for us, these foods reflect Florida’s climate and produce. Consumers are also craving dimension in mouthfeel when they eat — crunchy, chewy, crispy — multi textured food all in one bite that is also highly engaging.
According to Whole Foods, beef tallow is making a comeback, both in restaurants and with the home cook. It has a rich flavor and high smoke point compared to traditional oils, and you can expect to see more wide use of ancestral fats (animal fats humans cooked with before we developed seed oils) from cooking sprays to high end restaurant menus.
Protein
Protein continues to be a star this upcoming year as consumers not only seek protein-rich entrées but protein-laced snacks and desserts. Crisp Power makes a line of protein pretzels that pack a whopping 28 grams of protein per snack-size bag. In my pantry, I keep Quest Protein Chips because they’re both satisfying and offer 19 grams per bag. I also have a jar of high protein gourmet peanut butter made my American Dream Nut Butter (the Twix flavor), that I snack on when I get sweet cravings.
Gut Health
Proper gut health is paramount as the gut has long been thought of as the second brain. This gut focus will really start to unleash in 2026 as consumers are looking to roots and fibers in their cooking. Things like cassava and chicory will become more popular. Fermented foods, like vinegars, kimchi, kombucha, and fermented sauces will also be more prominent. Places like St. Pete Ferments are already ahead of the game and you can find their products on menus across Tampa Bay. New to kombucha? Check out Beech Kombucha for fantastic, Tampa Bay-based flavors.
Along those lines, look for more adaptogens to be added as upsells on menus. Adaptogens are natural substances (herbs, roots, and mushrooms) that are great for mood health. They help manage stress as well as boost energy. Look for ginseng, maca root, ashwaghanda, and other mushrooms in both drinks and baked goods across coffee shops.
Global Flavors
In 2026, you can expect to see more bold global fusions and unique dining experiences. Florida has a melting pot of global fusion — everything from Cuban and Caribbean, to Southern comfort and Latin. We’ll likely see more pop-ups and food trucks with these Afro-Caribbean fusions as well as up-and-coming global flavors like Dubai chocolate and matcha. Look for unique dining experiences like Dining in the Dark in Tampa and various pairings that go beyond the ubiquitous wine and cheese flight.
The 2026 food forecast is shaping up to be a hot one, full of flavor and discovery.
