SkyBeach Resort in St. Petersburg last week opened its newest Mediterranean-inspired restaurant, LUMA.
The menu features what it calls a “mezze program.” It includes house-made breads such as lavash, grilled naan, and pita, paired with garlic hummus, smoky baba ghanoush, and golden whipped feta.

Beyond mezze, the menu leans into Gulf Coast seafood and fire-driven cooking. Specialties include Gambas al Ajillo with Key West pink shrimp, Florida Gulf ceviche, Mediterranean roasted whole fish, and lamb over fire skewers.
Vegetarian options include charred baby carrots with grapefruit, hazelnuts, and tahini vinaigrette, as well as watermelon and feta topped with arugula, Aleppo pepper, and citrus vinaigrette.
The restaurant includes dock-and-dine access at the SkyBeach Marina, allowing guests to arrive by boat.
